Raw apple cider vinegar is not heated or heavily processed after fermentation and is usually unfiltered, so it keeps the Mother and looks cloudy. Pasteurised vinegar is heated to stabilise it and is usually filtered and clear. Check the label to see which you are buying.
What does 'raw' mean?
'Raw' is a label term rather than a legal grade. In vinegar it generally means the product has not been heat-treated or heavily filtered after fermentation. Mevva sells its apple cider vinegar raw and unfiltered, with the Mother.
What does 'pasteurised' mean?
Pasteurisation heats a food to reduce microbes and extend stability. Many clear, shelf-stable vinegars are pasteurised and filtered. Because vinegar is already very acidic, it keeps well either way.
Raw vs pasteurised at a glance
- Look: raw is cloudy; pasteurised is usually clear.
- Processing: raw is minimally processed; pasteurised is heated and filtered.
- Mother: raw keeps it; pasteurised usually does not.
- Storage: follow the label. Mevva's raw vinegar says refrigerate after opening.
Is one safer?
Both are widely used foods. Vinegar's acidity limits microbial growth. If you have a weakened immune system or are pregnant, speak to your doctor before using raw foods generally.
Does raw taste different?
Slightly. Many people find raw vinegar rounder and a little fruitier, while filtered vinegar tastes cleaner and sharper. For cooking, the difference is small.
How to read a vinegar label
- Look for 'raw' and 'unfiltered' if you want the Mother.
- Check the acidity (for example 5%).
- Look for the FSSAI licence number and the ingredients list.
- Read the storage and best-before information.
